Meet the Suppliers - Flying Fish Seafoods

When something is born of passion there is no stopping it, and it’s a passion for sustainability, responsibility and supplying the freshest and finest ingredients that drives John Godden, Founder of Flying Fish Seafoods.

Johnny has been working closely with our Head Chef Matthew Tomkinson for over 10 years; from the days when Johnny was one man with a van until today, as a successful business owner supplying some of the UK’s best restaurants and chefs with the best produce.

Flying Fish Seafoods was born at the source, in Cornwall, and that is exactly where Johnny believes ‘has the richest and most varied seafood in the UK’. And it’s from Cornwall where he works with hand-picked Day Boat Fishermen to find the freshest fish and deliver it to his customers in as little time as is possible.

Everything is personal when it comes to Johnny’s business, and the expectations of the fishermen he works with are extremely high to ensure their practices are always aligned with his. He will only support seasonal, ethical fishing and flies the flag of sustainability with great pride, emphasising the importance of ensuring there is ‘fish for our children’s children’.

When it comes to the relationship between Chef and Supplier? There is an abundance of mutual respect and understanding of each other’s expertise; Matt is happy to be completely guided by Johnny, serving according to the day’s catch and Johnny’s knowledge, which is why The Terrace’s menu will always read: ‘Day Boat Caught Fish of the Day’, rather than detail the specifics you may have expected.

This is trust, reliability, seasonality and ultimate creativity at its best, and a true testament to Matt’s skill in the kitchen; going blindly into each menu and working around Johnny’s fresh delivery to craft unforgettable dishes from the finest ingredients, which only left the Atlantic Ocean just 24 hours before.

Despite their growing reputation as an outstanding supplier and the many notable industry commendations, including an invitation to join the Royal Academy of Culinary Arts and full SALSA accreditation, Johnny’s aspirations for Flying Fish Seafoods is not to diversify or dramatically expand the business along with its huge success. Instead, Johnny’s plan is to quite simply, and unassumingly, get better at what he does. When considering that what he does is deliver superior quality produce with integrity and passion, it seems a big ask to improve but somehow, we know he’ll exceed expectations, as always.


The restaurant is open to residents and non-residents daily for lunch and dinner. Whether it's for a celebration, executive meeting, private birthday dinner or afternoon tea - For places to eat in Hampshire, The Montagu Arms is the perfect spot.
