Thomas Sheppard is Head Chef at Monty’s Inn, the quintessentially British pub located in the grounds of countryside hotel The Montagu Arms, Brockenhurst. With over a decade of experience in the industry, Tom brings his flair for flavours to the role, with a focus on locally sourced produce and seasonal ingredients.
As Head Chef at Monty’s Inn, Tom is responsible for the curation of the menus at the pub, as well as for managing the kitchen team on a day-to-day basis. Tom’s menus offer traditional British classics, alongside a selection of elevated pub choices, thanks to his penchant for experimenting with flavours and textures. Expect Chalk stream Trout with Jerusalem artichoke and roast onion, smoked Hampshire bacon on toasted sourdough with fried duck egg & spiced tomato, Dark Chocolate Torte with Smoked Dorset Sea Salt.
Previously Chef de Partie at The Montagu Arms in 2010, Tom returned to the company after having held the role of Sous Chef at The Pig in Brockenhurst. Joining in 2014 as Chef de Partie, Tom quickly climbed the ranks at The Pig, developing his own signature cooking style, and learning to create elegant and refined dishes, that put the spotlight on quality ingredients.
Tom studied at Southampton City College and began his career in the hospitality industry at Turtle Bay in Southampton, it was here Tom first learnt to work in a fast-paced environment, developing his essential skills and realising his passion for food.
Tom's cooking style has been hugely influenced by Fergus Henderson for his 'use every part' approach to food. "This is something I'm really passionate about and what drew me to working at The Montagu Arms. We strive for as little food waste as possible and treat each ingredient with utmost respect, ensuring we do every part justice" says Tom.
"One of my favourite ways to cook is with a coal barbecue. I couldn't do without it in the kitchen, it gives food such an incredible flavour. I'm always on the look out for new and innovative ways of cooking; it's so important to keep learning and improving. I would encourage any budding chef to choose a great college where they can absorb and learn as much as possible."
Outside of the kitchen, Tom enjoys discovering exciting new places to eat, and playing golf with his friends.
