Our New Menu - and why you have to try it

Now he’s got his new, dream kitchen, our head chef, Matthew Tomkinson, has been putting it to excellent use – creating some fabulous new dishes for our new menu at the Terrace Restaurant - and why you have to try it!
 
The starting point is always taste and flavour – what can we create from the freshest ingredients available – but it’s also about the things we know our guests love eating – and which I love cooking, says Matt.

If you are one of our lovely regulars what will you notice?

Well, the à la carte’s main course fish dish is now called ‘fish of the day’ because the fish is all ordered daily from our supplier.
 
The boats contact our supplier and tell them what they’ve caught, he then texts me with the fish selection and we work around him, says Matt.
 
Whatever he catches that day we produce that same night on the menu, so it’s hours old rather than days. This means it may be the same fish three days in a row but it’s the freshest catch you can have and that’s what’s important.
 
As ‘fresh’ fish can sometimes be up to 10 days old, and The Terrace’s will be no older than 16 hours and more usually just 12, we think our guests will notice the difference!
 
You’ll also see that scallops – Matt’s favourite signature dish – feature on the new Signature Tasting Menu along with the Assiette of Apple – brought back because so many guests asked for it.

The Surprise Tasting Menu now features a plated cheese course and Matt is perfecting a new cheese dish for this menu which features Baron Bigod, the UK’s only raw milk Brie – watch this space!
 
Puddings include an exquisite basil sorbet and cider lollies but don’t worry, you’ll find plenty of old favourites involving caramel and chocolate. Lots and lots of chocolate! Because, as Matt points out:
 
We wouldn’t leave out anything that guests have always enjoyed, which is why we included the Assiette of Apples (the apples for this come from our owner’s garden) and the rabbit, beef fillet and smoked mash.
 
Wiltshire truffles appear on our new menu, along with Creedy Carver Duck and venison from Alresford, and fans of Jerusalem artichokes – yes, there are many! – will find them back on the menu once they’ve grown in our kitchen garden.

So treat yourself for no other reason than you probably deserve it, to lunch or dinner at The Terrace Restaurant. We’ve refreshed the look of the dining room too. It’s lighter, brighter, inspired by our New Forest surroundings with sumptuous new seating to encourage you to linger longer.
